Dal Makhani Recipe: Whoever has tasted Dal Makhani would hardly have remained without praising it. Although many varieties of dal are quite famous, but when it comes to dal makhani, there is no dearth of people who like it. The butter floating on top of the dal is enough to make the mouth water. Generally, all of us must have tasted Dal Makhani many times in hotels or restaurants. Many people even try to make Dal Makhani at home in order to have a restaurant-like taste, however, most of them are not able to get the same taste.

Rajma – 1/2 cup |
Chana dal – 1/2 cup |
Urad dal whole – 1 cup |
Cream – 4 tbsp |
Milk – 1/2 cup |
Butter – 3 tbsp |
Tomatoes finely chopped – 2 |
Onion finely chopped – 1 |
Green chilli finely chopped – 3 |
Red chilli powder – 1/2 tsp |
Turmeric – 1/2 tsp |
Cloves – 3 |
Cumin – 1/2 tsp |
Kasuri Methi – 1 tablespoon |
Ginger-garlic paste – 1 tablespoon |
Asafoetida – 1 pinch |
Garam masala – 1/4 tsp |
Coriander powder – 1 tsp |
Kashmiri red chilli – 1/2 tsp |
Mango powder – 1/2 tsp |
Oil – 4 tbsp |
Salt – as per taste |
Method of making Dal Makhani
To make Dal Makhani, first take urad dal, chana dal and rajma, clean them thoroughly and soak them in water for 5-6 hours. After this wash the lentils and kidney beans thoroughly. Now take a pressure cooker and add pulses and kidney beans into it. Add 4 cups of water in it, then add turmeric, milk, red chilli powder and salt and cover the cooker with lid.
After this, turn on the gas on medium flame and let the cooker emit 5 to 6 whistles. When the whistles come, turn off the gas and wait for the pressure of the cooker to subside. After the pressure of the cooker releases, open the lid and mix the dal well with the help of a ladle.
Now take a pan and put oil in it and keep it to heat on medium flame. When the oil becomes hot, add cloves, cumin and asafoetida and fry. Now add ginger-garlic paste to it and fry everything well. Then add onion and green chillies to this mixture and fry. When the onions become soft, add tomatoes to it and cover and let it cook for four to five minutes.
Now add Kashmiri red chilli powder, coriander powder, garam masala and dry mango powder to the dal and mix. If the dal seems thick then you can add some water to it. After this, mix the dal well and let it boil for about 5 minutes, after that turn off the gas flame. Now garnish the dal with butter, cream, kasoori fenugreek and chopped coriander leaves. Your delicious Dal Makhani is ready for dinner. It can be served with naan, paratha, roti or rice.
